White Chicken Chili



Ingredients
Amount
Chicken breasts, boiled and diced or shredded
1 pound
Northern Beans, do not drain
48 oz
Salsa
16 oz
Shredded Cheese
1 cup
Corn, drained, *optional
1 can
Chicken broth
1-2 cans (14oz) depending how thick you want it
Salt
to taste
Cumin
to taste

Directions
  1. Boil the chicken breasts until they are cooked all the way.  Cut into cubes or shred.  *For quick and easy shredding use kitchen aid, while chicken is still hot*
  2. Combine all ingredients, except cheese into a large pot.
  3. Cover and simmer for about 1 hour.  Stir occasionally.  If too thick, add more chicken broth.
  4. Add cheese about 10 minutes before serving.  
 
 
Love this recipe...I try to keep these ingredients on hand, because it is so quick and easy to whip up.

Make sure to shred while chicken it is still hot!  It works like a charm.
Not the best picture, but it is super tasty.  We like to serve with additional cheese, sour cream and rolls.
  

Apple Slices with Teeth



Ingredients
Amount
Apple Slices
as many as you want
Peanut butter

Marshmallow Bits

Water
4 cups
Salt
1/2 tsp

Directions
  1. Wash and slice your apples.
  2. Dissolve 1/2 tsp. salt in 4 cups cool water.  Allow your apples to soak for 5 minutes.  This will prevent them from browning.
  3. Smear peanut butter on one side of an apple slice with the peel facing forward.  Place the other apples slice on top, also with the peel facing forward...this makes the lips.
  4. Place the marshmallow bits along the edge of the apple in the peanut butter to make teeth.
  5. Chill and serve.
 Another fun snack for Halloween and pretty healthy too!



I ran out of time before the party, so mine weren't perfect, but they still were a big hit!

Mummy Dogs


Ingredients
Amount
Hot dogs
1 pkg 
Refrigerated Crescent rolls
1 pkg 
Ketchup

Mustard


Directions
  1. Unroll and cut the crescent roll triangles into strips.
  2. Wrap the crescent roll strips around the hot dog.  Do a small section on the top for the hat, leave a space, and then do the rest for the body.
  3. Bake in the oven at 350 degrees for 15-20 minutes, until the crescent rolls are golden.  
  4. Use ketchup or mustard to make dots for eyes.  Serve with whatever toppings you like.
These are so fun for the kids at Halloween...my husband even liked them too.


You may even want to cut the strips more narrow.  I stretched them a little skinner when I was wrapping the hot dogs.

Chicken Divan


Ingredients

Pre-Cooked Rotisserie Chicken or Chicken Breasts, Boneless, Skinless
1 whole or 3 breasts
Frozen broccoli spears
1 bag
Shredded cheese
1 1/2 cups
Evaporated milk
14 1/2 oz
Condensed cream of chicken soup
10 3/4 oz
French fried onions
3 1/2 oz

Directions
  1. Cut up the pre-cooked rotisserie chicken.  Or cook chicken breasts and dice.
  2. Thaw frozen broccoli.
  3. Place chicken in an un-greased baking dish (9x13).  Arrange vegetables on top of chicken and top with shredded cheese.
  4. Mix evaporated milk and soup.  Pour sauce over baking dish.  Bake at 350 uncovered for 25 minutes.  Place onions on top and bake 5 minutes longer.

*Make 4-6 servings*

I like the pre-cooked chicken way of making this for when you are in a hurry.  All this meal took was cutting up the chicken and dumping into a pan.  My husband really loved this and asked me to make it again and I only had 2 dishes to wash!

Remember this meal only took a very short time because all it took was dumping things into a pan!

How to make a tutu

Supplies:
Tulle (The spool I buy is 5.75 inches wide and 25 yards long)  For a baby to toddler tutu I usually use 2 spools...The more you use the fuller it is.  You can use one color or mix and match.
Elastic (I use Knit 3/4 inch)
Thread
Sewing machine or needle to hand stitch
Scissors
Scrap cardboard piece (I used a paper plate)
*Optional:  A pretty ribbon to tie in the front.

1.  Cut your card board piece to the length you want your tulle to stick out from your tutu (Mine was cut around 7 inches) Wrap your tulle around the cardboard until you have used the entire spool.  Cut all the tulle at one end of the cardboard piece.  The length of your tulle will be double the cardboard length (about 14 inches for mine), but will be tied on the elastic so will end up the length of the cardboard once tied.  You can always trim it down once your tutu in complete.

 2.  You are left with lots of pieces of tulle.
3. Cut your elastic to the desired size.  Just measure your little girls waist first to get a proper size. Then sew the ends together. When sewing I like to stitch back and forth a few times to make sure it is sturdy.
4. Now begin tying your tulle around the elastic waist band.  You are essentially just tying a knot around the elastic.  Leaving both ends of the tulle pointing out in the same direction.


5.  Continue to tie your tulle all the way around the entire elastic piece.  Make sure to push the tulle pieces close together as you are tying to make it full.  Once you are finished you can trim the tulle pieces to make them all the same length and even.  And now you have a darling tutu for your little lady!



Cranberry Chicken

This recipe is a family favorite and hardly takes any time to put together.  Serve it with your favorite side dishes.

Fresh Chicken Breasts

Whole Berry Cranberries
1 can
Onion Soup Mix
1 package
Cream of Mushroom soup
Optional, 1 can


Directions
  1. In a stone baker or pyrex pan, place chicken.
  2. In a bowl mix cranberries, onion soup mix, and optional cream of mushroom soup.  Pour over chicken in pan.
  3. Cover with lid and place in the oven.  Bake at 425 degrees for 1-1 1/2 hours.

Chilled Mixed Berry Dessert


Ingredients
Amount
Small frozen bag of mixed berries
1 or 2 
Cool Whip, Medium size
1
Yogurt
1 large
Jell-O instant pudding, Cheese cake flavor
1 small box

Directions
  1. Mix yogurt and pudding mix together.
  2. Mix in berries and cool whip.
  3. Chill before serving.
